【Henan】Dried beans and meat buns
Overview
I rarely upload steamed bun recipes because the steamed buns I make are really ugly and hard to use. Today I am serving steamed buns because the stuffing is really delicious. Every time my family makes buns with this stuffing, they are all sold out. So even if it doesn’t look good, I’ll post it and share it with everyone. I dried the dried beans last autumn. Using dried beans for stuffing has a unique aroma. It has a completely different texture and taste from fresh beans. You will know it after you taste it

Ingredients
Steps
-
Add flour to yeast powder and mix with 400 grams of water to form a slightly soft dough
-
Cover with a wet drawer cloth and ferment until doubled in size
-
The dried beans are dried by myself
-
Soak in water in advance
-
Chop pork stuffing, add ginger, five-spice powder, salt, soy sauce, and rice wine and mix well
-
Chop the soaked dried beans, mix with oil, and then mix with the meat filling
-
Chop the green onions, mix them evenly with sesame oil, and then mix them with the meat filling.
-
Add the green onions and stir gently until evenly mixed. Do not over stir, otherwise the green onions will easily change flavor
-
Divide the risen dough into portions and roll it into a round sheet with a thick middle and thin outer edges
-
Wrap in fillings
-
Let the wrapped buns rest for about 20 minutes. It's cold now, so I put it in the oven, moisturized and kept warm at 30 degrees, and let it rise for 20 minutes
-
After the water boils, steam for 18 minutes. After steaming, turn off the heat and don’t open the pot for a while. Wait 2-3 minutes before opening it again, so that the dough will not collapse easily
-
Steamed buns with soft skin and fragrant fillings are worth trying.
