Twice-cooked pork with garlic sprouts
Overview
The twice-cooked pork is stir-fried to release the fat, and it is delicious when stir-fried with any vegetarian dish. It is really delicious and goes well with rice!

Place the pork belly in a pot of cold water, add onion, ginger and cooking wine, bring to a boil and skim off the foam, reduce to low heat and simmer for about 15 minutes, remove and cool and slice into pieces for later use.

Wash the garlic sprouts, cut into sections and set aside.

Pour a little oil into the pot, add pork belly slices, two slices of ginger and a spoonful of cooking wine.

Fry out the fat until the inside is slightly brown. Add a spoonful of bean paste and stir-fry until the red oil comes out.

Pour in the garlic sprouts and stir-fry over high heat evenly.

Add a spoonful of oyster sauce, sugar, a little salt to taste, and stir-fry over high heat.

Remove from pot and plate.
