Crystal Pork Skin Jelly
Overview
The skin jelly I made today may be because I used a no-boiler. It is crystal clear and full of elasticity. If you cook it in the afternoon and cover it with a lid to simmer overnight, the effect will be better.

Wash the meat skin with clean water and cut into small pieces.

Use a knife to scrape the front and back sides of the meat skin clean.

Add water to the pot, boil the pork skin, and cook until the skin is rolled up and taken out.

Cut the meat into dices of the same size.

Pour a new pot of water and add the diced pork skin.

Add all the seasonings and boil for 20 minutes, then add cooking wine and salt, stir well and remove from heat.

Cover and simmer overnight.

Now slice it with a serrated knife.

Plate it and serve immediately. You can dip it in some garlic chili oil and eat it.
