Select the ingredients as shown in the picture and wash the duck meat.

Chop the garnishes individually to your liking. Mushrooms are optional, but don't chop them too finely because they need to be stir-fried and will burn easily. The sand ginger must be chopped very finely, so that it can penetrate into each piece of duck meat, but at the same time, it will not bite into a large piece of sand ginger and the taste will be too strong.

First boil a large bowl of water, add duck meat, and drink it with a little wine, in order to remove the special taste of duck meat (I don’t know how to say that taste in Mandarin).

Add a small amount of oil and stir-fry the duck meat over high heat. The duck meat will become oily after a while, so turn to medium heat. (There is no need to add garlic and ginger at this time, as it will easily burn if added too early).

Stir-fry until the duck meat is slightly yellow in color, continue to stir-fry the mushrooms, garlic, and ginger together, and stir-fry over low heat until the duck meat is golden in color.

Fry until the duck meat is golden brown, add white wine, salt, sugar and ginger slices, add water (to cover the surface of the duck meat) and soy sauce, cover the pot and simmer over high heat.

Reduce the juice over medium heat, add coriander and chopped green onion, stir evenly, and remove from the pot.
