For the meat filling, use cooking wine, light soy sauce, pepper, and salt, mix well to taste, cut onion, ginger, and pepper into small pieces and set aside

Cut the tofu into small pieces and blanch them (add a little salt), remove the dry water and set aside

Heat a pan, pour in more oil (more oil than when stir-frying), add tofu and fry until golden brown on both sides, take out and set aside

Leave the oil in the pot, pour in the meat filling, and stir-fry until it turns white. Add onions, ginger, and dried peppers, stir-fry until fragrant. Add the fried tofu and stir-fry evenly. Pour in an appropriate amount of water and add salt to taste. Bring to a boil over high heat, then reduce to low heat and simmer for ten minutes
