Tomato Beef Stew
Overview

Prepare ingredients. Wash the beef, cut it into large pieces, put it in a pot under cold water, add onion and ginger slices, rinse it with water, and cut it into small pieces. The size is based on personal preference.

Put a little oil in the pot and sauté the onions, ginger, garlic and peppercorns.

Blanch the tomatoes in boiling water, peel them, cut into large pieces, cut the green onions into sections, slice the ginger, and smash the garlic.

Add beef and stir-fry for 3 minutes, add red wine, Pixian bean paste, a small amount of dark soy sauce, and white sugar (you can omit it if you don’t like sweet food, it is mainly to neutralize the sourness of tomatoes)

Add the tomatoes and stir-fry for a few times. If you like it a bit pureer, you can stir-fry the tomatoes separately first and then mix them.

Pour the fried beef into the electric pressure cooker together with the tomatoes, add a small amount of boiling water (or not, the tomatoes will release water), press the beans and tendon options, and press on high pressure for 35 minutes.

Pour the stewed beef into the wok and turn to high heat again to reduce the juice.
