Steps
-
To make Okpi, mix all the ingredients for Okpi, knead into a smooth dough and put it in a ziplock bag for later use. This amount is a bit large. Knead an okonomiyaki and you won’t be able to use it all up. You can reduce the amount or make several kinds of cute bread in a row. Store in the refrigerator, but don't store for too long.
-
Put all the ingredients for the main dough except butter into a bowl and knead the dough.
-
After kneading into a smooth dough, add butter and continue kneading.
-
Spread out a thin film.
-
After kneading the dough, cover it with plastic wrap and let it ferment at room temperature for about two hours until it doubles in size.
-
Stick flour with your fingers and poke a hole. If it doesn't shrink or collapse, the fermentation is complete.
-
Take out the dough and deflate it with a rolling pin.
-
Divide out a 48g piece of dough first, and then divide the rest equally into 6 pieces, each piece of dough is about 40g. Cover with plastic wrap and rest for 20 minutes.
-
Take a piece of dough and flatten it, put 25g of bean paste in the middle, wrap it into the dough, pinch to seal, and then put the smooth part facing up.
-
Place everything on a baking sheet lined with greaseproof paper and cover with plastic wrap to prevent it from drying out.
-
Next, start making the bear’s ears. Divide the 48g dough into 12 3g pieces of dough.
-
Place it in the corresponding position and press the ears with the main dough.
-
Start making the mouth part. Take a piece of okonomiyaki and roll it out to a thickness of 1 mm. Then use a medium piping tip to cut out 6 circles.
-
Brush the back of the okpi with water (be sure to be gentle as it will easily deform) and stick it to the main dough.
-
Place in the oven for fermentation at 130 degrees Celsius for about 40 minutes.
-
After fermentation is completed, preheat the oven and bake at 180 degrees for about 20 minutes. Cover with tin foil.
-
Take it out immediately after taking it out of the oven and place it on a drying rack to cool completely. Then brush a layer of melted white chocolate on the oak skin, stick it with milk powder, and then use melted dark chocolate to draw the facial features! Complete~
