I plan to ask my friend to bring some bacon from this brand in a few days (my bacon is from Wangjiawu brand). This kind of Xiangxi bacon has a strong smoky flavor, somewhat similar to Western bacon. But the difference is that our Chinese-style bacon is not only made from better-quality materials, but also tastes more like and richer after being blessed by Father-in-law Sun! There happened to be a small piece of bacon left, so I made this bacon and potato muffin for my dad and asked him to take it with him when he went fishing. Because my father has diabetes, there is no sugar in the ingredients, and it is a savory cake. This small cake is very simple to make, just mix all the ingredients and then bake it in the oven. If the baking time is not included, then the entire operation process takes 10 minutes, which is more than enough. The smoky and salty flavor of the bacon, the soft and slightly sweet potato, and the various spices and black pepper make the cake rich in flavor. For those who can’t eat sugar or don’t like sweets, this small cake is a good choice~ And I specially tested it. Because of the addition of diced potatoes, even if it is eaten after cooling, it is quite moist and soft, and not dry at all!

  1. Prepare various materials, mix low-gluten flour + salt + aluminum-free baking powder and sift 2 to 3 times;

  4. Preheat the oven to 190 degrees. Add the sifted powder mixture and mix evenly using irregular techniques until there is no dry powder left;

  6. Put the mixed cake batter into paper cake cups. I used medium-sized paper cups and made 4 cups. Then sprinkle the remaining bacon and diced potatoes on the surface;

  7. After preheating is completed, put the paper cup into the oven, middle layer, heat up and down, 180 degrees, and bake for about 25 to 30 minutes. After baking, you can insert a toothpick into the cake. If the surface of the toothpick comes out clean and there is no attachment, then the cake is done. Transfer the baked cake to a drying rack and let cool slightly before serving.
