Crystal Shrimp Dumplings
Overview
The kitchen knife at home is really not fast, so I bought pork, but it was not easy to chop, and the food processor was too fine, so I didn’t add pork, so I made an improved version of leek and shrimp dumplings. My happiest moment is when I’m cooking every day. Create your own fun.

Steps
-
Prepare the ingredients: Ordos prawns bought from the supermarket, a carrot, a bunch of leeks, and two eggs.
-
I directly remove the shrimp head, cut the back of the shrimp with scissors, and remove the shrimp lines on the back and abdomen. Wash the prepared prawns and set aside.
-
Cut the processed shrimps into puree, use lemon to remove the smell, chop the carrots, and chop the ginger. I didn’t leave the shrimp alone, it was just as delicious as puree! 😂
-
Chop the leeks, fry the eggs and put them in a basin with the shrimps, carrots and ginger. No seasoning for now. Water comes out easily after adding salt. Prepare the dumpling wrappers first.
-
Add oil to the pot, fry the pepper until fragrant, cool and set aside.
-
The ratio of starch powder to cornstarch is almost 3:1.
-
Add boiling water and stir until there is no powder.
-
Knead into a smooth dough and cover with plastic wrap. Wake up for a while.
-
Add the cooking oil that has just fried the peppercorns to the stuffing, add sesame oil, oil, salt, and thirteen incense. Wear gloves and hold evenly.
-
The dough is sticky and not easy to roll out. Place it directly on the board and roll it out flat to a moderate thickness.
-
Using a bowl or cup, press out a round shape.
-
Use a knife against the panel to lift off the skin. Haha

-
Boil water in advance, put a cloth in the steamer, add dumplings, and steam for 6 minutes. Don't turn the heat to full, otherwise the dumplings will easily break.
-
Steamed.

Remove and serve on a plate. Time is tight and I have to take care of a baby, so I really have no work to make dumplings. Please call me Big Mac Shrimp Dumplings.
