Heat the oil in a pan until it is 50% hot.

Crack in the eggs and fry over low heat until golden brown on both sides.

Cut the poached eggs into large slices, cut the lean meat into thin slices, and mix well with starch and a little oil. Cut the green peppers diagonally.

Remove from the pot (do not add oil), add chili peppers, add a little salt and stir-fry until soft.

Dish out and set aside.

Heat oil in a pan. When the oil is 70% hot, add the meat slices and stir-fry quickly until they change color.

Add the fried chilies and stir-fry evenly.

Add poached eggs.

Add garlic sprouts and stir-fry evenly.

Add salt, chicken essence, oyster sauce, light soy sauce and rice wine to taste, stir-fry evenly and remove from the pan.
