  3. Cut the soaked mushrooms into thin strips and reserve the mushroom water for later use;

  4. Add scallions to the chicken wings, add cooking wine, light soy sauce, dark soy sauce, and black pepper and marinate for 30 minutes;

  5. Pour sesame oil into the pot, add ginger slices and sauté slowly over low heat until the edges of the ginger slices are slightly browned, add the chicken pieces and stir-fry until they change color;
