West Lake Beef Soup
Overview
My son didn't have much appetite today. I told him this was West Lake Beef Soup. He liked it very much and still finished half the bowl of rice. In fact, the ingredients of authentic West Lake beef soup are beef, eggs, mushrooms and coriander. However, as long as the children like it, no matter whether it is authentic or not, I will call it West Lake Beef Soup.

Prepare the ingredients. I use cooked braised beef here, and the taste is different from the authentic method.

Cut the braised beef into small cubes and slice the ginger

Put the diced beef and ginger slices into the pressure cooker and add a large bowl of water and simmer for 15 minutes to allow the beef aroma to blend into the soup. (You can do it without a pressure cooker, but you need to add more water and cook for a while)

Cut the soft tofu into small cubes, beat the eggs, and cut the green onions into chopped green onions and set aside

After the beef is cooked, pour it into the soup pot together with the soup, then add the diced tofu, oil, salt, white pepper, and light soy sauce and cook for a few minutes

Pour in the water starch and stir for a minute, then slowly pour in the egg liquid, and use chopsticks to quickly beat the eggs into fluffy shapes. Finally, drop in the sesame oil and sprinkle with chopped green onion.
