Hot and sour shredded lotus root

Peel, wash and cut the lotus root into thick shreds (note: if you want to shred the lotus root, cut it into slices along the eye of the lotus root first, and then cut into strips along the eye of the lotus root. If you want to fry the lotus root slices, cut them crosswise). After cutting, wash them to remove excess starch and sludge in the eyes of the lotus root. Chop the garlic, cut the dried red pepper into small pieces, and cut the green onion into flowers

Heat oil in a pan, add minced garlic and red pepper and sauté until fragrant

Add shredded lotus root and stir-fry quickly until it changes color

Add a spoonful of white vinegar along the edge of the pot and stir-fry evenly

Add salt and chicken essence to taste, sprinkle with chopped green onion and stir-fry evenly
