Prepare the ingredients, chocolate or cocoa powder, weigh all the powdery ingredients, if you don’t have grapeseed oil, you can use corn oil.

Put the water quality ingredients into the bread machine

I used chocolate so it melted over water. If you are using cocoa powder, you can skip this step.

All powdery ingredients, including high-sugar resistant yeast, sugar, and salt, are mixed together evenly and covered on top of the watery ingredients.

The dough mixing process is completed and the dough is basically smooth.

This step requires mixing the oil into the dough. It may feel difficult to mix in at first, but believe in the power of time. After a process, all the oil will be mixed in and the dough will become smooth and shiny.

Check the dough's film release status, this level is fine.

Enter the fermentation stage and wait for 1 hour. The optimal fermentation temperature is about 28 degrees.

After fermentation is completed, dip your fingers into the dry powder and poke holes to see if it doesn't shrink back.

Divide the dough, about 55 grams each, and shape into a circle.

Place in the oven for secondary fermentation, or at room temperature of 28 degrees, and cover with plastic wrap.

After the second fermentation is completed, it will expand approximately twice as much as before.

Heat oil in a small milk pot and use chopsticks to test the temperature. If bubbles appear along the chopsticks, it means it is 180 degrees and it is ready.

Put the donuts in and fry them until they become chubby and float with lots of small bubbles.

Both sides are golden, and the chocolate dough is difficult to master. It takes about 1 minute to fry a donut until it is done.

Dip in melted chocolate for decoration, or not. Let cool and sprinkle with powdered sugar.
