Clean the shrimps and set aside

Use scissors to cut off the legs, eyes, beards, and spikes on the head, then pour in white wine and stir, drain the surface water and set aside

Mix sugar, vinegar, water, minced garlic and minced ginger into a bowl of juice and set aside

When the oil in the pan is hot, add the shrimps and fry until the skin is crispy. Pour off the excess oil

Pour the prepared sauce into the bowl, cover and simmer for half a minute

Stir a few times until the juice thickens!
