Cut the chicken into cubes, simmer with shredded ginger and salt and add a little water starch

Fry the peanuts or roast them in the microwave for later use

Dice cucumber and carrot and set aside

Cut small red pepper into sections and shred fresh ginger. Add edible oil to the wok and stir-fry the chili and ginger until fragrant. Add the simmered chicken to the pan and stir-fry until it changes color. Add the cucumber and carrot, add cooking wine, oyster sauce, salt, and finally add the peanuts, stir-fry and pour in the water starch.
