Wash and drain sweet potatoes, purple potatoes, taro, corn, and arugula and set aside.

Cut pumpkins, purple potatoes, sweet potatoes, and taro into small sections with their skins on.

Take a large container, mix the vegetables, add olive oil and salt, mix well.

Place the whole grains on a baking sheet and cover with tin foil.

Put it into the oven at 200 degrees, middle layer, upper and lower heat, and bake for 40 minutes.

Take it out and sprinkle in the arugula.
