Chop the mutton into pieces.

Blanch the mutton, white radish, ginger slices and cooking wine in cold water for 3 minutes, remove and wash off the foam with hot water, and discard the white radish (to remove the fishy smell).

Ginger garlic chili and spices are prepared.

Blanched mutton.

Put oil in the pot, add mutton, rock sugar, ginger, garlic and chili and stir-fry. Cook in cooking wine, light soy sauce and dark soy sauce to add color and aroma.

Put it into a pressure cooker, add water and bring to a boil, cover with steam and turn to low heat for 15 minutes.
