A carp. Remove the internal organs and clean it

Make a cut under the fish head and remove the fishy thread

Cut off the head and tail fish bones and keep them

With the fish skin facing down, cut the fish meat with a diagonal knife. The thickness can be adjusted according to your preference

Put all the fish heads, fish tails and fish bones into a cooking pot and add salt, sugar, cooking wine and white vinegar

The sesame oil prepared in advance (fried with dried chili peppers and red peppercorns) will become redder in color and the flavor will be richer if soaked for a longer time

Take a spoonful of sesame oil, add dried chili pepper and bean paste and stir-fry over low heat until fragrant

Put the fried sesame oil into the pot where the fish heads are cooked

Marinate the fish fillets with salt, sugar, cooking wine and white vinegar

Turn the pot on high heat for two minutes and then reduce the heat to low. Let the spicy flavor fully integrate into the fish soup for another five minutes. Add the fish fillets. Just boil it. It will become tender if cooked for a long time

Add sesame oil and dried chili peppers to the pot and stir-fry over low heat until fragrant
