Super soft coconut bread
Overview
I like coconut-flavored food, so I always stock up on ingredients at home. I happened to have coconut and coconut milk, so I made this coconut bread. It’s also a cute and soft girl, come and try it.

Put all the bread ingredients except butter into the bread machine (liquid first, then powder), dig a hole in the middle of the flour, pour the yeast powder in, and start the dough mixing process.

Knead for about 10 minutes. After the dough is formed, add butter and continue kneading until it is fully expanded. The total kneading time is about 45 minutes.

Start the fermentation function and let the dough double in size. Dip your fingers in flour and poke holes until it does not collapse or rebound.

While the dough is fermenting, you can make the coconut filling. Cut the butter into cubes and soften, add 30 grams of powdered sugar, and beat until the color becomes lighter and the volume increases. Add 30 grams of egg liquid in three batches and beat.

Beat evenly each time and then add the next amount of egg liquid. Then add 60 grams of grated coconut and mix well with a spatula.

Add 12 grams of milk and mix well. After the coconut filling is made, cover with plastic wrap and refrigerate.

Take out the risen dough and deflate it, divide it into nine equal parts, roll the dough into a round shape, cover it with plastic wrap and let it rest for 15 minutes.

While the dough is resting, take out the coconut filling from the refrigerator and divide it into 9 equal parts.

Take a small piece of loose dough, roll it into a round shape, and wrap it with coconut filling.

Close the mouth and pinch it tightly, and wrap the other 8 portions in the same way.

Place the seams side down and place them one by one into a non-stick baking pan.

Place it in the oven for secondary fermentation. Place a bowl of hot water at the bottom of the oven to maintain humidity until it is about doubled in size.

Take out the risen dough and brush it with a layer of egg wash or whole egg wash.

Sprinkle a little coconut on top of the bread to decorate.

Place in the middle rack of the preheated oven and bake at 180 degrees for about 20 minutes. After coloring, cover with tin foil to prevent the color from being too dark.
