Today, I suddenly wanted to eat spicy chicken, but I didn't want to bother with deep-frying it, so I made this [Braised Chicken with Red Oil].

Wash the native chicken and drain it temporarily, pat the garlic lightly to remove the clothes, and prepare all the auxiliary ingredients. Heat oil in a pan over low heat, add bean paste and stir-fry. Add garlic, ginger slices, bay leaves, cinnamon, star anise, and peppercorns and stir-fry until flavourful.

Add the chicken pieces and stir-fry until fragrant for 6 minutes. Add sugar, white wine, and light soy sauce and stir-fry for 10 minutes.

Cover the pot and simmer for 2 minutes.

Add spicy millet and stir-fry to taste. Plate and serve.
