Cut tomatoes into cubes, soak mushrooms and fungus and cut into cubes, prepare minced ginger and scallion.

Wash and cut the chicken into pieces, marinate with light soy sauce, cornstarch (starch) and oil for 10-20 minutes.

Heat oil in a pan and stir-fry tomatoes to produce tomato juice.

Add the chicken and sauté for a minute.

Add onion, ginger and garlic and stir-fry evenly until fragrant.

Add enough oyster sauce (without salt) and stir well.

Add water (just enough to cover the chicken), add mushrooms and fungus after the water boils, boil over high heat for two minutes, then turn to medium heat and simmer for 5-10 minutes.

Sprinkle with chopped green onions and serve!
