Braised Chicken Legs
Overview
Braised chicken drumsticks are a popular home-cooked dish. The fried sugar-colored chicken legs are bright red in color and taste salty. It was very enjoyable to make it with the whole chicken leg. Since I was short on time, I chopped the chicken leg into small pieces and the taste was still great.

Wash 6 Pipa legs and dry them thoroughly.

Cut into small pieces and wash away the blood.

Prepare bay leaves, star anise, ginger, star anise, dried red pepper, and cinnamon.

Heat the wok and add appropriate amount of salad oil.

Heat the oil and add 3 tablespoons of sugar.

Stir-fry over low heat until the sugar melts, stirring constantly until the sugar sauce turns brown.

Add the chopped chicken pieces and stir-fry evenly until the chicken pieces are completely coated in the sugar sauce and the surface is golden brown.

Add all seasonings and stir-fry evenly

Add rice wine, light soy sauce, dark soy sauce, add an appropriate amount of boiling water, bring to a boil over high heat, then reduce to medium to low heat, simmer until the chicken is medium cooked, and add an appropriate amount of salt to taste. Continue simmering until chicken is completely cooked. Sprinkle appropriate amount of chopped green onions out of the pan.
