Cheese flavored sesame crackers
Overview
This biscuit can also be made into a normal-flavored sesame crunchy biscuit without adding grated cheese. Making this biscuit requires about 3 folding steps. Using cookie dough to practice making puff pastry makes it easier and less likely to fail. After being folded layer by layer, the biscuits are also crispy and taste great!

Pour the flour for the main dough into a large basin and add chopped mozzarella

Use your hands to slowly combine the chopped masu with the flour and knead into a coarse flour.

Add yeast, eggs and corn oil (main dough ingredients.)

Use chopsticks to stir into crumbs, add a little water and stir

Knead the dough with your hands into a smooth dough, cover and let rise at room temperature for half an hour.

Start making the puff pastry. Put the flour of the pastry dough into a small bowl, add salt and mix well.

Add the amount of corn oil required for pastry dough and mix into a soft and hard pastry dough.

Use a rolling pin to roll the risen main dough into a rectangular shape, and spread the pastry on the main dough slightly to one side. (As shown in the picture)

Fold the short end of the main dough first.

Fold the other end also to wrap the pastry.

Turn the folded dough sheet 90 degrees

Use a rolling pin to roll it out.

Continue to fold the dough according to the folding method above. Repeat this fold once or twice.

After folding, cover the dough with plastic wrap and let it rest for 10 minutes

Roll the relaxed dough into a uniform thickness. Brush a little water on the surface and sprinkle with white sesame seeds, then sprinkle with some dry flour, and press the sesame seeds slightly with a rolling pin.

Use a corrugated knife to cut off the irregularities on the four sides

Cut the cookie dough into 4cm long and 3cm wide.

Use a fork to make neat holes on the surface of the cookies to prevent them from puffing up during baking.

Place the prepared biscuits onto a baking sheet lined with greaseproof paper.

Preheat the oven, place the baking sheet in the middle of the oven, and bake at 180 degrees for 15 to 20 minutes.

Please adjust the baking time appropriately according to the thickness of the cookies.

The baked cookies can be simmered in the oven for a few minutes to make them crispier.
