Overview
Bitter melon and shrimp are simply natural enemies. One is green, the other is red, one is bitter and the other is fresh. They don’t even need too much seasoning when they are made together, and they are so delicious that they will make you lose your eyebrows

Peel off the shrimp heads and shells, leaving the tails

Open the back and pick out the shrimp lines

Make a small opening on the back of the shrimp and poke the tail out

Place on a plate and sprinkle with pepper, salt and cooking wine and marinate for 10 minutes

Cut the bitter melon into small pieces of about 3.5 cm, scoop out the white part with a small spoon
