Remove the fascia from the chicken breast, add water to the pot, add onions, ginger, aniseed, and peppercorns. Bring to a boil over high heat, then turn down the heat to low until the chicken is cooked, immerse in cold boiling water until cool and drain.

Shred cucumbers and carrots.

Use the back of a knife to break up the cooked chicken breast and tear it into shreds.

Mix shredded chicken, carrots and cucumbers.

Mix light soy sauce, sugar, sesame oil, and chili oil in a bowl to make juice.

Pour the juice over the three shreds and mix well.
