Adjust the filling: wash the shrimps, peel off the shells, remove the black threads, put them in a bowl, add 1g of baking soda and a little water, mix well and set aside.
-
Wash the leeks and cut into 0.5cm long pieces. Wash the mung bean sprouts and cut off the heads and tails, leaving only the crispy stems in the middle.

-
Rinse the shrimps, drain them and cut them into small pieces. Add them to the minced pork together with the chopped chives and mix well.
-
Wrapping: Take a piece of spring roll wrapper and lay it on the chopping board, put an appropriate amount of filling in the middle, and arrange it into a rectangle. Add a few bean sprouts. If the bean sprouts are too long, you can cut them off.
-
Roll up the spring roll wrapper from the bottom up to cover the rectangular filling.
-
Fold the spring roll wrappers on both sides toward the middle.
-
Finally, roll the entire spring roll from bottom to top into a cylindrical shape, seal it downwards and place it on a plate for later use.
-
Frying: Pour oil into the pot, heat over medium heat until it is 40% hot (small bubbles will appear when inserting chopsticks), and add spring roll bases one by one. When placing the spring roll base, place the seal downwards and fry until the shape is set before flipping over.
-
Fry all the spring rolls until they are set, take them out, heat the oil in the pan to 60% hot again, put the spring rolls in and fry again, flipping and frying until golden and crispy, then enjoy.
