Wash the fish and set aside.

Cut onion into sections, slice ginger, and mince garlic.

Heat oil in a frying pan and add ginger slices to bring out the aroma.

Use kitchen paper to absorb the water from the fish.

Add the fish and fry until browned on both sides.

Fry onions and garlic until fragrant.

Add rice wine to remove the fishy smell, add soy sauce, salt and sugar to taste.

Cover and simmer over low heat for 5 minutes.

Remove from pan and plate.
