Gold Medal Tofu
Overview
Isn’t this dish a bit like gold inlaid with jade? Haha, so I named it Gold Medal Tofu, which is actually braised tofu in pumpkin juice. It uses fresh mountain water tofu, paired with healthy pumpkin juice, and broccoli. It is salty and sweet when stewed, tender and soft, and has the refreshing taste of broccoli. It is a beautiful and delicious dish. In addition, a few salted egg yolks are added to the pumpkin juice, which makes this dish more full and delicious. A dish with simple ingredients can become a great dish with a little time and thought.

Prepare tofu, pumpkin, broccoli and other ingredients.

Take 4 salted egg yolks and set aside.

Slice the pumpkin into slices and steam until soft.

Tear broccoli into small florets

Add an appropriate amount of water to the pot and bring to a boil, add two tablespoons of salt, and blanch the broccoli in the pot.

Set aside the blanched broccoli.

Cut the tofu into 5mm thick slices

Arrange the cut tofu in a circle and place on a plate.

Add water to the pot and bring to a boil. Steam the tofu for 3 minutes.

After steaming the tofu, drain the water from the plate and place the fried broccoli in the middle of the plate.

After the pumpkin is steamed, take it out.

Add an appropriate amount of salt to the pot and heat it up, add the salted egg yolk into the pot and stir-fry until fragrant.

Add the steamed pumpkin to the salted egg yolk and press with a spoon until completely melted.

Cook salted egg yolk and pumpkin until completely combined

Remove the cooked pumpkin and squeeze out the juice through a strainer.

Put the pumpkin juice into the pot, thicken it with water starch, and pour it on top of the tofu.
