Chop the chicken into pieces, blanch them, and rinse them with cold water (removing the blood will also make the chicken chewy and not stale)

Prepare a few bay leaves, two star anise, two small pieces of cinnamon, ginger slices, garlic cloves, and a few green onions

Pour oil into the pot. When the oil is hot, add cinnamon, bay leaves, ginger, garlic and green onions. Stir-fry until fragrant. Pour in the chicken pieces and stir-fry. Then add braised soy sauce, bean paste, cooking wine and a little vinegar and continue to stir-fry.

Stir fry until the pot is dry, pour in cold water, bring to a boil over high heat, then reduce to low heat and simmer for half an hour

After half an hour, add salt, simmer for another ten minutes, turn to high heat, add two dried chili peppers and a few garlic cloves and start to reduce the juice.

The soup is almost done. Don't make it too dry and leave a little soup. Finally, add the green onions and take it out of the pot.
