Bean paste and egg yolk mooncakes
Overview
Mooncakes are a must-eat during the Mid-Autumn Festival. They represent reunion and happiness and are also the favorite thing of the Chinese people. I sent the five-nut mooncakes I made last time to my mother. She liked them very much. I baked some with egg yolk and bean paste filling today. I plan to send some more to my mother. I don’t usually go home much. It’s the holidays, so I sent a hand-made mooncake to my family. The love cannot be replaced by any material or money. The whole family is together, happy, happy, and happily eating mooncakes together. It is really delicious! The Mid-Autumn Festival is here, Feifei wishes everyone: happiness and good health; a sweet life, a smooth career, and happy family reunion. Happy Mid-Autumn Festival!

Ingredients
Steps
-
Soak duck egg yolk in oil for more than 3 hours,
-
Pour the juice, corn oil, and syrup into a bowl and mix evenly!
-
Brush in low-gluten flour,
-
Mix thoroughly, cover with plastic wrap and refrigerate for 1 to 3 hours. I left it for about an hour!
-
Cover the soaked egg yolks with oil-absorbing paper, wipe off the oil, put them on a plate, spray wine with a water spray pan, and spray each one with water😊! Put it in the oven, heat it to 150 degrees for 5 minutes, take it out and let it cool for later use. (You don’t need to preheat the oven.) At this time, stir-fry the glutinous rice flour and flour over low heat. The ratio is 1:1 and it will be slightly brown. (I took the photo off, sorry)
-
Take out the pie crust and divide it into 25g. (I used a 50g mold, divided into 25g crust and 25g filling. You can allocate the ratio of crust and filling according to your needs!)
-
Put the egg yolk and bean paste into the weighing scale, 25g each (the bean paste filling is bought ready-made, you can also make it yourself!)
-
Press the bean paste into a nest and put it into the egg yolk, push it up with the tiger's mouth, close the mouth and make a round shape,
-
Wrap the pie crust the same way!
-
Add in the cooked flour and roll it around. (The ratio of fried flour and glutinous rice flour is 1:1 to prevent sticking!)
-
Put it into the mold and fill it all around,
-
Press it down, take out the mold,
-
Do everything in turn and spray each one with mist water from a spray bottle. At this time, preheat the oven to 180 degrees for 3 minutes
-
One egg yolk, add a little water and mix well
-
Put it in the middle rack of the oven and heat it to 180 degrees for 5 minutes. Take it out and let it cool. Brush it with a thin layer of egg yolk. Don’t brush too much!
-
Put it in the oven again for 16 minutes, take it out, let it cool, and seal it in a bag! Leave it for 2 to 3 days to recover the oil and then you can eat it!

The Mid-Autumn Festival is here, I wish you all: Happy Mid-Autumn Festival!
