Deboned pork knuckle;

Cut the pork knuckle into pieces, marinate in soy sauce, vinegar and ginger for half an hour;

Blanch the pork knuckles and set aside;

Add oil and rock sugar over low heat;

Fry the oil and rock sugar over low heat until the sugar turns brown, then add water;

Add the blanched elbows, star anise, fennel, salt, chicken essence, ginger slices, green onions and garlic cloves and stir-fry evenly;

Put the prepared elbows into the pressure cooker and wait for 20 minutes;

Scoop a bowl of rice and serve with braised pork and vegetables.
