Bought fresh beef.

Cut fresh beef into evenly sized cubes.

Soak it in a large basin with clean water for an hour to wash away the blood.

Prepare all seasonings.

Slice the scallions and garlic, and cut the scallions into sections.

Pour cold water into the pot, put the beef in, add green onions and ginger, and add a spoonful of cooking wine.

After the water boils, use a spoon to scoop out the floating foam.

After cooking for another two minutes, take out the beef and remove the green onions and ginger slices inside.
