Have materials ready.

Rinse the yams under the faucet, peel them, cut them into pieces and put them in light salt water.

Then rinse to remove mucus.

Cut green onion into sections; cut red pepper into shreds; cut ginger into shreds.

Prepare the sauce and set aside: vinegar, sugar, soy sauce, bone broth, salt, stir to dissolve the sugar and salt.

Heat oil in a pan, add scallions and ginger and sauté until fragrant.

Pour in the yam slices and stir-fry for a while.
