Chongqing Secret Food-Potato Baba
Overview
This written term should be called potato pancake, but it is not made of boiled and mashed potatoes and fried; it is peeled, ground into puree, and directly fried. Nine out of ten people in my hometown are fond of this kind of food. My hometown is rich in potatoes, and those who peel potatoes make their own homemade peels, called planing. Growing up like us, we had to peel potatoes when we were young. If we didn't know how to peel them, we would often end up with starchy slurry all over our faces. When adults talk about fried potato cakes, they are extremely confused, because we have to peel the potatoes, and sometimes we have to help grind them. It feels like a big project, but our mouths are so greedy, there is nothing we can do! In fact, this is much easier to do now. There are machines that specialize in peeling potatoes. If you want to make more but are too lazy to grind the mashed potatoes, you can use a corn mash machine, but a food processor cannot, because the grinding is too fine and the taste is not good. Start mixing the seasonings. It mainly depends on your taste. I added pepper powder, chili powder, salt, ginger, garlic, scallions, and two spoons of spareribs sauce bought in the supermarket. Put it aside and test for taste. Add whatever is missing

First, burn a bowl of hot oil. It will fry faster. When the pan is hot, put a shovelful of the heated oil directly to make the contact surface of the oil larger and start pancakes. I use an induction cooker and can't make a few at once. If it is a natural gas or gas stove, you can fry the pancakes in one pan. Just turn the pan with your hands

After frying, you can sprinkle some chopped green onion yourself. I happened to have used up only a few chopped green onions. You can also put it back in the pot and stir-fry. In the past, adults at home liked to stir-fry some bacon in it to make it very fragrant. I haven’t done it for a long time, so I still haven’t mastered it, but it is still delicious. Also, if the potatoes themselves are not starchy enough, try adding more starch if they don’t form when you first fry them!
