Braised pumpkin with shrimps

Cut green onions into sections, slice ginger, and cut pumpkin into thick slices

Peel the heads and skin of the prawns, open the back and remove the devein. Don’t throw away the shrimp heads, they are rich in astaxanthin

Put oil in the pot, heat it up, add the shrimp heads

Fry over medium heat, press the shrimp heads with a spatula to fully release the brains, add hot water and cook for 3 minutes

Use a slotted spoon to remove the shrimp heads and pour out the shrimp brain juice and set aside

Heat the pot again, add oil and fry the onion and ginger over low heat until fragrant. Add pumpkin and stir-fry over high heat

Pour in the shrimp brain juice and continue to stir-fry over high heat

Add the shrimp, add cooking wine and stir-fry evenly. Add appropriate amount of water, salt and white pepper

Cover and simmer over medium heat for about 7 minutes, stirring in the middle so that it heats evenly and the soup thickens

Turn off the heat, drizzle with sesame oil, take out of the pan and serve on a plate
