Cut the tofu skin into thin strips.

Cut the ginger into slices, cut the white scallions into segments, and cut the green scallions into shreds.

Blanch the tofu skin with boiling water.

Remove the blanched tofu skin, drain the water, spread it out with chopsticks, and let it cool naturally. Remember not to use too cold water.

Add salt, soy sauce, sugar and sesame oil to the cool shredded tofu and stir evenly.

Put oil in the pot. When the oil temperature is 5, add pepper, chili pepper, green onion, and ginger slices. When the onion and ginger are browned, take them out and discard them.
