Spicy Shrimp
Overview
Spicy shrimp is a Chongqing-style Sichuan dish with juicy, rich flavor and crispy meat; it is also an excellent dish to accompany wine.

Wash the shrimps and cut off the shrimp gun and whiskers. Use a toothpick to pick out the shrimp threads. Marinate them with cooking wine and a little salt for 15 minutes.

Prepare the ingredients (as shown in the picture)

Add cooking oil to the pot and bring to a boil. Pour in the marinated shrimp and fry until golden brown.

Take out and set aside

Heat the oil in another pot, add ginger, onion, garlic, dried red chili pepper, and Sichuan peppercorns and sauté.

Pour in bean paste and stir-fry until fragrant.

Add the fried shrimps and stir-fry a few times.

Add boiling water and sugar and cook over high heat until the soup is thick and fragrant.

Garnish with coriander and white sesame seeds and serve.
