Pork Belly Braised Pan-Fried Tofu
Overview
There are many ways to eat tofu. I like to fry the tofu until both sides are golden (commonly known as: two sides yellow in my hometown), then add pickled peppers and pork belly and stew it together to make it suitable for rice.

Cut the tofu into slices of even thickness.

Pour rapeseed oil into the pot, heat it up to 70%, add tofu, and fry until both sides are golden brown.

Tofu fried in pure rapeseed oil is more fragrant.

Soak the ginger, pickle the peppers, and chop the garlic and set aside.

Chop garlic sprouts and red pepper and set aside.

Slice the pork belly and season with cooking wine, salt, water and starch; after frying the tofu, add the pork belly and pickled ginger, chili and garlic to the pan and stir-fry until fragrant.

After the pork belly is fragrant, add light soy sauce, boiling water, and salt. Add tofu and simmer for 5 minutes.

Just add starch to thicken and season before serving.
