  1. Beat the egg yolks with a manual egg beater until pale

  5. Beat mascarpone cheese until smooth

  6. Mix with egg yolk liquid evenly to form a fine cheese paste

  7. Soften the gelatine sheets in ice water in advance and then melt them in hot water

  8. Pour the melted gelatine liquid into the cheese paste and stir evenly

  9. Whip the light cream until it becomes fluid, pour it into the cheese paste, stir evenly and set aside

  10. Soak finger biscuits in coffee wine to absorb the wine, then place an appropriate amount at the bottom of the container

  11. A layer of biscuits, a layer of cheese paste, spread all over the mold

  12. Refrigerate overnight, unmold, sift an appropriate amount of cocoa powder, wrap a circle of biscuits, tie with a ribbon, and decorate (haha~ the biscuits are floating and you can see their shape)
