Ginger and Scallion Noodles
Overview
It reminds me of a time-honored noodle shop in Guangzhou. I must order the ginger and scallion noodles there every time. I've been craving it again recently, so I decided to make one myself. Although the noodles are not the traditional alkaline noodles, they are full of green onions and are very filling.

Prepare noodles, ginger, and green onions.

Chop the shallot into chopped green onions, crush the ginger and shred it.

Boil a pot of water. You can add more water. After the water boils, add a spoonful of salt to the pot.

The noodles are cooked below, stirring constantly with chopsticks to avoid sticking to the pan.

The noodles are cooked until there are no white cores left.

Remove the noodles and drain the water.

Heat another pot and add oil.

After the oil is hot, add the ginger and green onions and stir-fry until fragrant.

Add two tablespoons of oyster sauce and stir-fry for a while, keeping the heat low throughout.

Add noodles and remove from heat.

Next spoonful of steamed fish with soy sauce.

Use chopsticks to stir the noodles, ginger and scallion, and it's ready.
