Prepare the beef slices (this beef slice has a lot of fat, and this is the only ingredient at home. In fact, it is best to use beef that does not have so much fat for this dish)

Cut the beef into slices, add light soy sauce, salt and chicken essence

Shred beef slices and mix well

Add water starch

Grip the beef slices evenly again, be sure to grip them evenly, otherwise it will affect the taste later

Pour in cooking oil and marinate for 10 minutes

Heat the pan with oil until it is 40% hot. Add the beef slices and oil them for a while (the beef will be more tender if you oil them)

Grease the beef and take it out for later use

Re-heat the pot, add a little oil (or leave the base oil), add minced garlic, ginger slices and onions and saute until fragrant
