Braised Rice with Chicken Legs, Mushrooms and Pumpkin
Overview
The pumpkin becomes soft after being simmered, and the sweet juice seeps into the rice. During the cooking process, it absorbs the fresh aroma of chicken thighs and shiitake mushrooms. Clean and soak the mushrooms.

Mix the rice with an appropriate amount of glutinous rice (the stewed rice will be more delicious if mixed with glutinous rice, if not, you can just use rice alone).

Add slightly less water than usual for cooking rice to soak (the water used to soak the mushrooms is also poured in).

Debone the chicken legs and cut into small pieces.

Peel and cut the pumpkin into cubes, cut the mushrooms in half, and slice the ginger.

Blanch the chicken in cold water and wash away any floating foam.

Put oil in the pot, add chicken and ginger slices and stir-fry.

Add pumpkin and mushrooms and stir-fry, add salt, cooking wine, and light soy sauce to taste.

After frying, place it on top of the rice and select the rice cooking program.
