Prepare the ingredients: as shown in the picture.

Dice the winter bamboo shoots, carrots, and mushrooms, chop some green onions, and break the eggs into a bowl.

Heat oil in a pan, add diced winter bamboo shoots, diced carrots, and diced mushrooms and stir-fry for a while.

Add appropriate amount of water and bring to a boil over high heat.

Mix the cornstarch and water evenly and set aside.

After the soup boils, continue to cook for about three minutes, add the egg liquid, and stir gently.

Pour in the prepared cornstarch water and stir evenly.

Add salt and mix well.

Pour the soup out and sprinkle with chopped green onion and a few drops of sesame oil and it's done.
