Cut ginger, garlic, millet pepper, and chives into sections.

Peel and wash potatoes.

Grate it into threads and wash it with water to remove some of the starch.

Heat the pot appropriately, stir-fry ginger, garlic, and pepper until fragrant.

Add shredded potatoes and stir-fry for a few times.

Season with appropriate amount of salt, light soy sauce and vinegar.

A spoonful of boiling water and stir-fry a few times.
