Soak the salted cherry blossoms two hours in advance. The salted cherry blossoms are more salty than the water.

Melt the butter, add the digestive biscuits crushed in a food processor and mix well. (If you don’t have a food processor, you can also put it into a plastic bag and use a rolling pin to crush it)

Pour into a 6-inch removable bottom cake mold and compact, then place in the refrigerator to chill until ready to use.

Soak 2 pieces of gelatine in cold water until soft.

Take it out, add a small amount of milk, put it in the microwave for 20 seconds, stir until the gelatine is completely dissolved, add sugar and the remaining milk and let cool.

Beat the light cream until it is 70% hairy and has textured and semi-fluid texture on the surface. Add the cooled milk and stir evenly.

Pour into molds and refrigerate in the refrigerator for 3 hours. (The pink color is made from pitted cherries and juiced. Take half of the mousse liquid, mix well, pour it into the mold and freeze for 20 minutes. Take out and pour the other half of the original mousse liquid, and continue to refrigerate for 3 hours. To make a mirror surface, soak a piece of gelatine until soft, heat and melt, add cold boiled water or purified water, take out the solidified mousse from the refrigerator and slowly pour it along the edge of the mold, drain the soaked cherry blossoms, place on the surface of the mousse, and refrigerate for one hour.
