Remove the lotus root tips, wash them, and cut them into thick slices

Rinse the cut lotus root tips under the faucet. Be sure to wash carefully. Some lotus root tips may have silt in their holes. Drain the water after washing

Cut the pork belly into thin slices, heat the pan with a little oil, add the pork belly and stir-fry

Stir-fry the pork belly until it is dry to your liking. Add the ginger slices and garlic and sauté for two seconds (garlic is easy to burn, so the frying time should be short, just one or two seconds)

Quickly add the drained lotus root tips and stir-fry

Lotus root tips are easy to cook, stir-fry quickly for a minute or two until soft and tender

Add an appropriate amount of salt and chicken essence, stir well, then take it out of the pan and put it on a plate. Sprinkle some chopped green onion to add color and fragrance (because there are no green onions at home, so this step is omitted, but it does not affect the taste)
