Overview
Wonton, a common breakfast dish for Cantonese people. Known for its thin crust and fresh fillings. I didn’t expect that making the dough yourself is so easy. It’s exactly the same as the ones eaten outside. The skin is thin but won’t break, and it’s full of chewy texture! The tender and chewy wontons paired with the delicious seaweed soup complement each other, creating a perfect bowl of Cantonese wontons that are delicious but not greasy!

Cut the carrots into shreds and cook in boiling water for two minutes to make juice. Mix the flour, carrot juice and salt into a dough and let it sit for 30 minutes.

Use the dough press to start pressing into sheets. Start with the thickest setting and press into large pieces. Sprinkle a thin layer of flour on the surface and spread it evenly with your hands. Adjust the dough press to medium thickness and continue to press into sheets.

Dust again with flour.

Continue to press, and after several repetitions, press to the thinnest thickness.

Cut into 7*7CM squares, cover with plastic wrap and set aside.

Start preparing the filling. Chop the chicken breast into puree, cut the carrots and mushrooms into mince, and cut the onion and ginger into mince.

Put the chicken in a bowl, add cooking wine, light soy sauce, green onion and ginger and mix well.

Add egg white and continue mixing.

Add chicken essence, salt, monosodium glutamate, thirteen spices, and oyster sauce and mix well.

Chop the shallots, mustard and shredded seaweed into a bowl, add half a spoonful of sesame oil and set aside.
