It was my first time to make this custard toast. I read the recipe online and thought it was feasible, so I made one accordingly. Unexpectedly, the toast was really super soft. It was so satisfying to just tear it apart with your hands and eat it. The custard sauce needs to be made in advance and refrigerated for an hour. If you are in a hurry, you need to make the custard sauce in advance and just take it out when you use it. Good bread also requires good flour. I came across Xinliang’s bread flour and cake flour last year. I used the bread flour to make toast for the first time when I bought it. The drawing effect was particularly good. I decided to use Xinliang’s bread flour to make bread. This time I tried Xinliang’s Yixiaobei bread flour. A pack of 260 grams is enough to make one toast. One pack at a time is not wasted. After this toast was baked, another one of the same kind was baked immediately. When my son came home from school, I must have eaten two-thirds of the toast, just in case I finished it without taking a photo. Haha, this is also a super foodie, comparable to his mother.

Prepare the ingredients

To make custard sauce, 65 grams of milk, 15 grams of high-gluten flour, 10 grams of sugar, 1 egg yolk, put into a container;

Stir all ingredients evenly;

Cook over low heat while stirring until the custard sauce is gelatinized, then remove from the heat. Let cool and refrigerate for one hour before use;

Put the dough ingredients with the butter outside into the bread bucket;

Use a spoon to stir into cotton wool to prevent flour from splashing everywhere when the bread machine is kneading the dough (this cloth can be omitted to save trouble)

After kneading the dough in a bread machine for 20 minutes, the membrane can be pulled out, but it is very rough;

Add softened butter and continue kneading for 20 minutes;

After 20 minutes, the dough has emerged;

Take out the dough, divide it into three equal parts, roll it into a ball, cover it with plastic wrap and let it rest for 15 minutes;

Take the relaxed dough and roll it into an oval shape from top to bottom;

Roll up from top to bottom;

After the three pieces of dough are rolled out, put them into the bread machine;

Select the yogurt fermentation program. This toast will ferment for 1:10 minutes until it is seventy percent full. After fermentation is complete, stop the fermentation manually;

Brush with whole egg wash;

Select the bake button for 30 minutes. Choose a light color. After baking, flip it upside down and remove from the mold. Leave it to warm with your hands and put it into a fresh-keeping bag for storage;
