Stupid Chicken Stewed with Potatoes

Chop the chicken into small pieces and put in cold water.

After the water in the pot boils, skim off the floating residue, add cooking wine, blanch the garlic segments and ginger slices for two minutes.

Remove the chicken and drain it repeatedly to control the moisture.

Prepare the seasoning, cut the green onion into small pieces and slice the ginger.

Peel potatoes and carrots and cut into cubes with a hob, and cut green and red peppers into cubes with a diagonal cutter.

Add a little cooking oil to the pot, add rock sugar and stir-fry until the sugar dissolves and fine foam turns amber.

Add chicken pieces and stir-fry until browned.

Add onion, ginger, star anise, bay leaves and dried chili and stir-fry until fragrant.
